Macaron Towers for Weddings: Everything You Need to Know
The first time we delivered a macaron tower to a wedding reception, the bride sent us a photo that ended up on her wedding photographer's portfolio page. That's the thing about macaron towers — they're not just dessert. They're a statement piece.
What Is a Macaron Tower?
A macaron tower (also called a pièce montée in French patisserie tradition) is a cone or tiered structure built from individual French macarons stacked and arranged to create a stunning centerpiece. They range from modest 50-macaron displays to elaborate 500+ macaron installations for grand receptions.
How Many Macarons Do You Need?
A simple guide:
- Small (50–75 macarons): Cocktail hour display, sweetheart table centerpiece, or supplement to a wedding cake
- Medium (100–150 macarons): Main dessert display for 50–75 guests, or a dramatic centerpiece with other desserts
- Large (200–300 macarons): Primary dessert service for 100–150 guests
- Grand (300–500+): Full dessert service for 150–300+ guests, multiple towers, or gala-style displays
As a general rule of thumb: 2–3 macarons per guest if the tower is the primary dessert, 1–2 per guest if it's one of several options.
Customizing Your Tower
Colors
We can custom-tint macaron shells to match your wedding palette. Tell us your hex codes or describe your colors and we'll match them as closely as possible. Most brides do 2–3 colors arranged in an ombre or alternating pattern.
Flavors
You can mix flavors throughout the tower. Popular combinations for weddings:
- Rose + Champagne Vanilla + Raspberry (romantic, floral)
- Salted Caramel + Dark Chocolate + Vanilla Bean (crowd-pleasing classics)
- Lavender + Lemon + Blueberry (fresh, spring/summer)
- Pistachio + Rose + Raspberry (French patisserie classic)
Display Presentation
We can add ribbon, flowers (fresh or dried), greenery, or custom toppers. Talk to us about your vision and we'll make it work.
Logistics: How It Works
Lead time: We recommend ordering at least 2–3 weeks before your event date. Peak wedding season (May–October) books out faster — contact us early.
Delivery and setup: We deliver to venues throughout the Hudson Valley, Connecticut, and Western Massachusetts. We handle setup on-site so the tower arrives intact and positioned correctly.
Shipping vs. delivery: Macaron towers are not available for shipping — they require in-person delivery and setup. For shipped macaron orders for weddings (favor boxes, dessert table boxes), those are available nationwide.
Macaron Tower vs. Wedding Cake
More couples are choosing macaron towers instead of or in addition to a wedding cake. Here's an honest comparison:
- Visual impact: A large macaron tower is arguably more impressive than a tiered cake — more color, more texture, more conversation-starting presence
- Customization: Easier to customize color and flavor combinations
- Guest experience: More accessible — guests can grab individual macarons rather than waiting for a cake to be cut
- No mess: No cutting, no plates required, no serving staff needed for the dessert itself
- Cost: Comparable to a tiered wedding cake at scale
