Blackberry Macarons: Late Summer's Dark Horse Flavor

August's fruit is the blackberry β later than strawberries, darker than raspberries, the sophisticated end of berry season. Blackberry macarons are the bakery's late-summer signature: deep purple, complex, slightly tart in a way that reads 'adult dessert.' This recipe uses freeze-dried berries in the shells and a fresh compote center, with a lemon buttercream rim for balance. Makes ~30 filled macs.
Ingredients
Shells:
- 180g almond flour
- 20g freeze-dried blackberry powder
- 200g powdered sugar
- 148g egg whites, divided 74g/74g
- 200g granulated sugar
- 50g water
- Deep purple-black gel (2β3 toothpick scrapes β blackberry shells want *depth*)
Blackberry compote:
- 200g blackberries
- 40g sugar
- 1 tsp lemon juice
- 1 tsp cornstarch + 2 tsp water
Lemon buttercream:
- 150g butter, 90g powdered sugar, 2 tbsp strained lemon juice, pinch zest, pinch salt
Step 1: Prep the Berry Components (Day Before Ideal)
Grind freeze-dried blackberries to powder, sift finely. Make the compote β blackberries, sugar, lemon, simmered 8β10 minutes, cornstarch slurry added for the last minute, sieved of seeds (blackberry seeds are too large for a mac filling's texture), chilled. The two components can rest in the fridge for up to a week before you bake.
Step 2: The Deep Purple Shells
The blackberry powder in the dry mix gives the shells an honest fruit flavor even before the filling β it's the difference between 'purple mac' and 'blackberry mac.' Standard Italian method otherwise: sift the dry mix (with the powder), paste with first whites, syrup to 118Β°C, whip second whites, stream, whip stiff, color dark. Macaronage to ribbon stage, pipe 3.5cm rounds, rest 30β45 min, bake 300Β°F for 14β16 min. Deep-colored shells brown subtly β watch them early, not late.
Step 3: Assemble β Dam and Center
Lemon buttercream rim (the lemon is the blackberries' friend β the acid brightens the dark fruit flavor), 1/2 tsp black compote in the center. Cap, twist gently. The blackberry center is thick enough that a slightly generous fill (up to 3/4 tsp) is stable if your dam is confident.
Step 4: The Blackberry Specific Notes
Blackberries' flavor deepens overnight β the day-2 macaron is better than day-1 even by macaron standards. Store airtight in the fridge up to 3 days. For maximum drama: serve on white plates with 2β3 fresh blackberries as garnish β the color contrast is the presentation. At the shop these arrive in late July and run through August, sometimes appearing in the shipped boxes for the season.

- Blackberry + lemon shell: flip the flavor map (lemon in the shells, blackberry in the center) for a brighter but still deep mac
