Blueberry Macarons With Lemon Zest Shells: Mid-Summer Recipe

Blueberries hit their absolute peak in July in our region β the bushes at local farms are literally heavy with them. This blueberry macaron is the definitive version: freeze-dried blueberry in the shells (the trick from our raspberry post), fresh berry compote in the center, and a lemon buttercream rim because blueberry-lemon is the pairing that should have its own holiday. Makes ~30 filled macs.
Ingredients
Shells:
- 180g almond flour
- 170g powdered sugar
- 30g freeze-dried blueberry powder
- 148g egg whites, divided 74g/74g
- 200g granulated sugar
- 50g water
- Purple gel coloring (1β2 scrapes) β blue-purple, not pink-purple
- Zest of 1 lemon, rubbed into the granulated sugar the night before
Blueberry compote:
- 200g fresh blueberries
- 40g sugar, 1 tsp lemon juice
- 1 tsp cornstarch + 2 tsp water slurry
Lemon buttercream: butter, powdered sugar, fresh lemon juice, lemon zest
Step 1: The Prep Work (Night Before)
Rub the lemon zest into the granulated sugar, spread to dry overnight. Grind freeze-dried blueberries to powder and sift. Make the compote (berries+sugar+lemon juice simmered 8β10 min, cornstarch slurry added, thick, sieved, cooled). These three projects are the make-ahead backbone; bake-day becomes assembly of ready components.
Step 2: The Purple Shells
Sift almond flour + powdered sugar + blueberry powder. Add first portion of whites to a paste, cover. Cook zested sugar + water to 118Β°C; whip the second whites; stream, whip glossy, color in the last minute toward a blueberry-purple (blue + small amount of red β it's the honest color of the fruit). Macaronage, pipe, rest 30β45 min, bake 300Β°F for 14β16 min. Fruit-powder shells rest on the longer end of the range.
Step 3: Assembly (Dam Method)
Pipe lemon buttercream ring, fill center with 1/2 tsp compote, cap, twist. The tart-bright lemon rim against the blueberry core is the flavor architecture here β don't skip the lemon buttercream for plain buttercream; the pairing is the point.
Step 4: Mature and Serve
Refrigerate airtight 24 hours. Serve at room temp, ideally in a small fluted paper cup if you're feeling fancy (a bakery touch that costs nothing and presents beautifully). These hold 2β3 days post-maturation before the fruit-center starts softening the shell past ideal.
U-Pick as a Family Outing (And What to Do With the Haul)
If you're in the Hudson Valley, this month is U-pick season at several local blueberry farms β a genuinely great family morning (the kids pick faster than they eat, which is rare for U-pick) and the haul is cheap. A 2-quart haul makes 3 batches of this compote plus smoothies for a week. The bakery uses local blueberries in season when the crop is good, and when the bushes are generous the whole valley tastes it. The case gets noticeably bluer in July.
Variations on Theme
- Blueberry-lemonade: add 1/2 tsp citric acid to the buttercream for a lemon-candy note
- Blueberry-thyme: a teaspoon of fresh thyme leaves finely chopped, steeped in the cream if you make a ganache version β the herbal note is professional-level
- Blueberry-white chocolate: swap buttercream for a white chocolate ganache if you prefer the richer filling
