Lemon Blueberry Macarons: Peak June Recipe

June is when lemons and blueberries overlap in the market and taste like summer's opening argument. This macaron pairs a lemon-zest shell with a buttercream dam and a center of reduced blueberry compote β the flavor combination is a classic because it's excellent. Makes ~30 filled macs.
Ingredients
Lemon shells:
- 200g almond flour
- 200g powdered sugar
- Zest of 2 lemons, rubbed into the granulated sugar the night before (dries the oils in)
- 148g egg whites, divided 74g/74g
- 200g granulated sugar (zested, as above)
- 50g water
- Yellow gel coloring (1β2 scrapes)
Blueberry compote:
- 200g blueberries
- 40g granulated sugar
- 1 tsp lemon juice
- 1 tsp cornstarch slurried in 2 tsp water
Lemon buttercream:
- 150g butter, soft
- 90g powdered sugar
- 2 tbsp lemon juice (strained)
- Lemon zest, salt pinch
Step 1: Night Before β Zest Sugar Prep
Rub the lemon zest into the granulated sugar with your fingers until fragrant and lightly tinted; spread on a plate, uncovered, overnight. This infuses the sugar with citrus oil and dries the zest so it doesn't weep into your shells. Cover-and-store in the morning once dry. (This technique appears in our other citrus mac recipes for a reason β it's the difference between 'lemon-ish' and 'lemon.')
Step 2: Blueberry Compote, Reduced Thick
Simmer blueberries, sugar, and lemon juice over medium heat 8β10 minutes until berries burst and the mix thickens. Stir in the cornstarch slurry; cook 1 more minute to a true jam consistency β a spoon dragged across the pan should leave a trail. Strain through a fine sieve if you want seedless (we recommend it for piping). Cool, then refrigerate. Blueberries are drier than strawberries but still need the full reduction; under-reduced compote slides in the sandwich.
Step 3: Bake the Shells
Sift almond flour and powdered sugar; add first portion of egg whites into a paste, cover. Cook zested sugar and water to 118Β°C; whip the second whites; stream in the syrup; whip to stiff glossy peaks; add yellow color in last minute. Macaronage to ribbon/figure-8. Pipe 3.5cm rounds, rest 40β50 minutes (citrus-oil shells need slightly longer than plain), bake at 300Β°F for 14β16 minutes. These shells will carry a subtle lemon note before any filling goes in β that's the zested-sugar payoff.
Step 4: Lemon Buttercream for the Dam
Beat butter until pale, add sifted powdered sugar, salt, zest, beat fluffy. Add the strained lemon juice slowly β 2 tbsp is usually the max before it loosens too much to pipe; stop short if it starts to slacken. If it loosens, chill 15 minutes and re-whip. The buttercream needs to hold a dam shape β if it can't hold a ring, it's too soft.
Step 5: Assembly With the Dam Method
Pipe the lemon buttercream ring on each bottom shell; fill the center with 1/2 tsp blueberry compote; cap; twist. The blue-purple compote against the yellow shell is the visual signature of this mac. Refrigerate airtight 18β24 hours. Serve at room temperature on a bright table β these are summer macs, they want the picnic backdrop.
Make-Ahead and Variations
- Make ahead: the compote holds a week in the fridge; shells freeze unfilled for a month (freeze flat, thaw airtight)
- Blackberry version: identical recipe, swap fruit 1:1 β the classic blackberry-lemon works identically
- Lavender-lemon: 1 tsp of ground culinary lavender in the dry mix β the lavender honey cousin
