Peach Melba Macarons: Peach + Raspberry (The Classic Dessert as a Mac)

Peach Melba β the peach-with-raspberry-sauce-and-vanilla combination β was invented in the 1890s by Escoffier to honor opera singer Nellie Melba. It's the great peach-raspberry pairing, and in macaron form it becomes the summer's most elegant bite. This recipe makes the classic portable: peach shells, vanilla-white-chocolate ganache dam, raspberry center. Makes ~30 filled macs.
Ingredients
Peach shells:
- 200g almond flour
- 200g powdered sugar
- 148g egg whites, divided 74g/74g
- 200g granulated sugar
- 50g water
- 1β2 scrapes peach-toned gel (soft orange-pink)
Vanilla white-chocolate ganache:
- 180g white chocolate
- 90ml heavy cream
- Seeds of 1 vanilla bean
Raspberry compote:
- 150g raspberries
- 35g sugar
- 1 tsp lemon, reduced to thick
Optional garnish: a single fresh raspberry halved per plate
Step 1: Compote First (Always)
Simmer raspberries, sugar, lemon 8β10 minutes to a thick jewel-red compote; sieve out seeds (raspberry seeds are too prominent in a mac); cool and refrigerate. This compote is the Melba sauce's concentrated form β it should be thick enough to sit in a buttercream ring without running.
Step 2: Peach-Toned Vanilla Shells
Standard Italian-method shells with a whisper of peach gel color. The shells are neutral-vanilla vehicles here (the filling is the Melba's peach-and-raspberry duet; the shells are the backdrop). Pipe 3.5cm rounds, rest 30β45 min to skin, bake at 300Β°F for 14β16 minutes. The soft peach tone is delicate; if unsure, undercolor rather than overcolor β the filling carries the flavor's identity.
Step 3: Vanilla White-Chocolate Ganache
Heat cream with the split vanilla bean (steep 10 minutes if you have time, remove the pod); pour over chopped white chocolate; wait 2 minutes; stir smooth; cool to pipeable. The vanilla note should be soft and elegant; extract (1 tsp) works as a substitute but bean seeds are the class move here. See the ganache troubleshooting guide if it gives you trouble.
Step 4: Assembly (The Melba Architecture)
Pipe a white chocolate ganache ring on each bottom shell (the dam), fill center with 1/2 tsp raspberry compote, cap, twist. The 'Melba structure' is peach(vanilla ganache as a creamy element)+raspberry; the vanilla is the sauce-stand-in and the peach is the shell β not literal peach puree inside, which would fight the raspberry for attention. Refrigerate airtight 24 hours.
Step 5: Service and Pairing
Peach Melba macs are the dessert course's elegant anchor. Pair with champagne, a light off-dry Riesling, or β for the full classic effect β serve alongside a small scoop of vanilla ice cream or a bowl of fresh raspberries. These macs work for baby showers, fancy brunch tables, and 'I want something with a little history to it' moments. Variations on a Classic
- True peach filling: swap the vanilla ganache for a peach-compote-buttercream β closer to the original, but riskier structurally
- Peach Melba sundae: serve the mac next to a scoop of vanilla ice cream with raspberry drizzle for the deconstructed original experience
- Sparkling variant: a splash of champagne reduction in the ganache for the celebration version
- White peach: white-fleshed peach puree in the shell's dry mix if you can find them (they're at their peak in July; ask at the farm stand)
- The Escoffier homage: use a white plate, one mac per plate, a single fresh mint leaf, and tell your guests the name and the history β dessert-with-a-story is the best category of dessert
