Peach Pie Macarons: The August Grand Finale Recipe

Late August is the peach's final act and this recipe is its curtain call β the entire peach-pie experience (fruit, cinnamon, butter-crust notes) compressed into a macaron. We've published peach melba and brown-butter peach already this season; this last one is the richest β a full pie simulation. Makes ~30 filled macs.
Ingredients
Cinnamon-vanilla shells:
- 195g almond flour, 5g ground cinnamon
- 195g powdered sugar
- 148g egg whites (74g/74g)
- 200g granulated sugar, 50g water
- Vanilla bean seeds, half a bean
- Warm peach-tan gel, 1β2 scrapes
Brown-butter 'crust' buttercream:
- 150g butter, browned and re-solidified (the method here)
- 90g powdered sugar, pinch of cinnamon, pinch salt
Roasted peach center:
- 3 ripe peaches, butter, brown sugar β roasted and reduced (below)
Finish: cinnamon-sugar dust
Step 1: Roast the Peaches (The Pie-Filling Move)
Halve and pit the peaches; roast cut-side-up at 375Β°F, 25β30 minutes with a knob of butter and a spoon of brown sugar per half, until slump-soft and caramel-edged. PurΓ©e and reduce in a saucepan to a thick, spoonable filling (~150g final, thickened with a 1-tsp cornstarch slurry in the last minute). Roasting concentrates peach flavor past what raw reduction reaches β this is the pie-ness. Chill fully.
Step 2: Cinnamon-Vanilla Shells
The cinnamon is whisked into the dry mix (5g is a background note β visible speckle, aromatic warmth, none of the spice-forward dominance that would bury the peach). Standard Italian method: paste, syrup to 118Β°C, whip, stream, whip stiff, color warm peach-tan, macaronage to ribbon, pipe, rest, bake 300Β°F 14β16 min. Cinnamon can tighten the batter slightly β test the figure-8 a stroke early.
Step 3: Brown-Butter Buttercream
Brown the butter ahead (golden-amber milk solids, nutty smell, off-heat immediately β the brown-butter technique applies exactly), cool to solid-soft. Beat 3 minutes, add powdered sugar, cinnamon, salt; beat to fluffy pipe. The brown butter in buttercream near roasted peach is the whole 'pie crust flavor' illusion β it delivers butter-toast notes without any actual crust.
Step 4: Assemble Like a Pie Slice
Dam method: a brown-butter ring (the crust), 1/2 tsp roasted peach center (the filling), cap, twist. Dust finished macs with cinnamon-sugar through a fine sieve for the pie-top finish. Refrigerate airtight 24 hours; serve room temperature. Day-2 is the target β the peach center seeps gently into the shells overnight and the whole thing becomes unmistakably pie.
Step 5: Service β The Full Pie Fantasy
Serve with a tiny scoop of vanilla ice cream on the side for the complete Γ -la-mode reference, or crumble a pie-crust cookie under the macs on the platter for the texture echo. At the shop this is the last week-of-August special before the case pivots toward early fall β peach season ends abruptly and this mac is how we close it. For shipped boxes, peach pie ships well (the roasted center is more stable than raw-fruit fills) through early September.
Storage, Sourcing, and End-of-Season Notes
- Peach sourcing late-August: seconds from the farm stand are ideal for roasting β the bruised uglies roast best and cost half
- Storage: 3 days fridge airtight; the cinnamon-shell aroma fades after that, so this one has a shorter peak-window than most macs
- Freeze: yes, filled macs freeze 3 months β wrap well; the roasted peach center is the most freeze-stable fruit filling we've tested
- End-of-season pivot: the exact recipe works with late plums (reduce the sugar 10%) and early apples (add nutmeg, grate fine) β it's a template, not just a peach recipe
