Raspberry Macarons With Real Fruit: June Recipe

June 15 is basically peak raspberry season's opening day, and this is the raspberry macaron done properly: shells flavored with real freeze-dried raspberry (the trick for true fruit flavor without water), and a center of fresh-fruit jam in a white-chocolate ganache dam. Makes ~30 filled macs; plan for the freeze-dried raspberry powder to become your new secret weapon.
The Freeze-Dried Raspberry Trick
Fresh raspberries in shells make wet, unstable batter β the answer is freeze-dried raspberries, pulverized to powder, replacing a portion of the powdered sugar. The powder carries intense, true raspberry flavor with zero added moisture. Find freeze-dried raspberries at Trader Joe's (inexpensively), Whole Foods, or online; a small bag (30β40g) is the right amount for a batch. Process them in a spice grinder or food processor to a fine powder and sift like the other dry ingredients. The color they give the shells is gorgeous and honest β a real pink from real fruit.
Ingredients
Shells:
- 180g almond flour (reduced from the usual 200 to accommodate the fruit powder)
- 165g powdered sugar
- 35g freeze-dried raspberry powder (from ~35g freeze-dried berries, finely ground)
- 148g egg whites, divided 74g/74g
- 200g granulated sugar
- 50g water
- Pink gel (optional β the fruit powder gives decent color)
Filling:
- White chocolate ganache: 200g white chocolate + 100ml heavy cream
- Fresh raspberry jam: 150g raspberries + 40g sugar + 1 tsp lemon, reduced thick
Garnish: freeze-dried berry crumbles around the filling edge
Step 1: Prep the Fruit Components
Grind the freeze-dried raspberries fine, sift, set aside. Make the jam: berries, sugar, and lemon juice simmered 8β10 minutes to thick compote, sieved, cooled, refrigerated. These both hold for days; do them ahead.
Step 2: The Shells
Sift almond flour, powdered sugar, and raspberry powder together (twice β fruit powder has more lumps than plain flour). Mix with the first portion of whites for the paste; cover. Cook the granulated sugar syrup to 118Β°C; whip the second portion of whites; stream syrup; whip until stiff and glossy. Macaronage as usual β fruit-powder shells fold similarly to plain, maybe a fold or two more because the powder slightly thickens the mix. Pipe, rest 30β45 min, bake 300Β°F, 14β16 min.
Step 3: White Chocolate Ganache
Heat cream to steaming, pour over chopped white chocolate, wait 2 minutes, stir smooth. White chocolate ganache is notorious for 'breaking' β if it looks oily/separated, add a teaspoon of warm cream and stir; it usually re-emulsifies. Cool to pipeable peanut-butter consistency at room temp (1β2 hours).
Step 4: The Dam-Meets-Jam Assembly
Pipe a white-chocolate ganache ring on each bottom shell (the dam), fill the center with 1/2 tsp raspberry jam, cap and twist. Optional: while the ganache is still soft, roll the filled edge in crushed freeze-dried raspberries β the crumb halo is the signature bakery finish on these. It's the same fruit-dam logic as our strawberry and peach macs on the blog.
Step 5: Mature, Serve, Photograph
Refrigerate airtight 24 hours (jam-filled macs mature perfectly in that window). Serve at room temp with fresh raspberries on the plate β this mac photographs vibrantly and belongs on your summer table. The freeze-dried shell + fresh-jam center gives you both the 'always raspberry' base note and the bright fruit punch in the middle.
Variations and Notes
- Raspberry-rose: add 1/2 tsp rose water to the ganache β the classic Pierre HermΓ© pairing
- Mixed berry: blackberry or blueberry powder work identically; mixed-berry powder from a blend is excellent
- If shells crackle on top: the fruit powder absorbed moisture unevenly β rest an extra 15 minutes and bake 5Β°F lower
- Color note: for truly bright pink shells, a small amount of pink gel boosts the fruit powder's natural rose without artificial vibrancy
