S'mores Macarons: Toasted Marshmallow, Graham, and Chocolate in One Shell

August is s'mores season β campfire season, the end-of-summer cookouts, the sticky-marshmallow ritual. S'mores as a macaron takes the three elements (graham, chocolate, toasted marshmallow) and stacks them structurally: graham-crumb shells, dark chocolate ganache center, torched marshmallow on top. It's the bakery's most-requested August special, and yes, we torch them to order in the case. Makes ~30 filled macs.
Ingredients
Graham shells:
- 180g almond flour
- 20g finely-ground graham cracker crumbs (about 2 full crackers, blitzed and sifted)
- 200g powdered sugar
- 148g egg whites (74g/74g)
- 200g granulated sugar, 50g water
- Warm tan gel color (1 scrape, optional)
Dark chocolate ganache:
- 180g dark chocolate (60β64%), 90ml heavy cream
Toasted marshmallow topping:
- 150g store marshmallow fluff (or homemade meringue if ambitious)
- Mini marshmallows, graham dust, chocolate drizzle for garnish
- A kitchen torch (the fun tool)
Step 1: Graham Crumb Prep
Blitz graham crackers to fine crumbs in a food processor; sift through a fine mesh β you want powder, not chunks. Combine with the almond flour and powdered sugar as the dry mix. The graham adds a honeyed-wheat note that reads unmistakably as 's'mores base' once paired with chocolate. Too much graham (over 10%) makes shells gritty; 20g in 380g of dry mix is the tested ratio.
Step 2: Shells, Italian Method
Standard Italian protocol: dry mix + first whites into a paste; syrup to 118Β°C; whip second whites; stream syrup in while whipping to stiff glossy; fold to ribbon stage. The graham changes the batter's behavior slightly β it folds a touch tighter, so watch the figure-8 test carefully and stop a stroke before you think you should. Pipe 3.5cm, rest 30β40 min, bake 300Β°F, 14β15 min.
Step 3: The Ganache (Dark, On Purpose)
Dark chocolate is required β milk chocolate plus marshmallow would be cloying. 2:1 ratio, cream heated to steaming, poured over chopped dark chocolate, rested 2 min, stirred smooth, cooled to pipeable (1.5β2 hours at room temp with occasional stirring; see the ganache guide for troubleshooting). Pipe into shells as a full fill β not the dam method; s'mores is a solid-fill mac.
Step 4: Assemble, Then Torch (The Show)
Fill and cap the macs. Then the theatre: pipe or dollop a small swirl of marshmallow fluff on top of each capped mac, and torch it with a kitchen torch until golden-brown with a few charred edges β exactly the campfire look. The fluff does not go inside (it would dissolve during maturation), it's the crown. Add a graham-dust sprinkle and a chocolate drizzle for the full effect.
Torching can happen up to 2 hours before service β the toasting holds. Refrigerate the filled macs airtight for 24 hours before torching (the maturation happens pre-torch), then torch, then serve at room temperature.
Step 5: The No-Torch Alternative (Broiler Method)
No torch? Oven broiler on high, macs on a rack in the upper third, door open, eyes ON them β 45β90 seconds per tray is the whole window between golden and incinerated. Rotate the tray once. It works; it's just less fun. The fluff can also be pre-toasted separately: pipe dollops on a parchment sheet, torch, freeze 20 minutes, then lift onto the macs with an offset spatula β the production method we actually use for shop volume.
Serving Notes
S'mores macs at an August cookout, served on the dessert table next to the actual s'mores station, is the summer-party move of 2026 β the mac is the 'fancy version' and kids eat the real thing while adults eat both. For shipping: the fluff top doesn't travel; the shipped version is the graham shell + ganache + marshmallow-bit-inside variant, torching recreated at home optionally. Both are honest s'mores experiences.
