Why Did My Macarons Crack on Top? 7 Causes and Exactly How to Fix Each One

You did everything the recipe said, and your macarons still came out of the oven with tops split like little canyon rims. Cracked shells are the single most common macaron heartbreak, and the frustrating part is that cracks have at least seven distinct causes β each with a different fix. Let's diagnose yours properly, because "rest them longer" is only sometimes the answer.
Cause 1: The Shells Didn't Rest Long Enough
This is the classic cause. Piped macarons need to sit at room temperature until the surface forms a dry skin β when you touch one lightly, your finger should come away clean. In a dry kitchen that's 25β35 minutes; on a humid day it can take 60β90. If the skin isn't set, steam pushes up through the top during baking and the shell cracks. Fix: rest by touch, not by timer. If your kitchen is humid, aim a small fan across the trays.
Cause 2: Too Much Air Left in the Batter
Under-mixed batter (too little macaronage) traps large air pockets. In the oven those pockets expand and blow the top off. You'll usually see cracking combined with bumpy, lumpy shells. Fix: fold the batter until it flows off your spatula in a slow, continuous ribbon and you can draw a figure-8 without the ribbon breaking. The surface of piped shells should smooth out within 30 seconds.
Cause 3: Oven Temperature Too High
If your shells crack around the edges and brown early, your oven is running hot β and most home ovens are 15β30Β°F off their dial. At 300Β°F+ (true temp), the shell sets too fast on the outside while expanding air bursts through the top. Fix: buy a $10 oven thermometer and trust it, not the dial. For most home ovens, 285β300Β°F true is the sweet spot for French-method shells; Italian meringue shells often like 300β315Β°F.
Cause 4: Your Meringue Was Under-Whipped (or Broken)
A weak meringue structure can't hold a dome. Under-whipped meringue β soft peaks that droop β gives a fragile shell with thin skin that tears as it rises. Over-whipped, grainy meringue is just as bad: dry clumps create weak points. Fix: whip to firm, glossy peaks that stand straight up when you lift the whisk. If the meringue looks dull or chunky, start over β no folding technique rescues it.
Cause 5: Humidity Is Sabotaging You
Macarons are hygroscopic divas. On rainy days, shells absorb moisture from the air while resting, never fully form a skin, and crack in the oven. You'll notice resting takes forever and the piped circles spread more than usual. Fix: rest trays in the driest room you have, use a fan or dehumidifier, and consider the Italian meringue method on humid days β the hot syrup partially cooks the whites and makes the batter far more stable. Cause 6: Trapped Air Bubbles You Didn't Pop
Even perfectly mixed batter traps bubbles in the piping bag. Those bubbles rise during baking and crack the surface from below β look for one big crack radiating from a single point. Fix: after piping, bang the tray firmly on the counter 4β5 times, then use a toothpick to pop any visible bubbles that rise to the surface. This step is 20 seconds and saves whole batches.
Cause 7: Almond Flour Was Too Coarse or Too Oily
Lumpy, coarse almond flour creates an uneven shell with weak spots that split. Flour that's old or oily (almonds release oil as they sit) changes the batter's moisture balance and weakens the skin. Fix: use finely ground blanched almond flour, sift it with the powdered sugar, discard what doesn't pass through the sieve, and if your flour smells at all stale or clumps when pinched, replace it. Store almond flour in the freezer if you bake infrequently.
